Creative Cooking in the Age of COVID-19

The COVID-19 pandemic has dramatically affected our lives in ways large and small. Perhaps one of the factors that is just more of an inconvenience is the inconsistent availability of some of our favorite items in our local supermarket. 

Take as an example the case with eggs. Egg availability and price have reportedly been on somewhat of a rollercoaster since the outbreak began, with the demand for eggs and processed egg products surging more than 200 percent in the first half of March, when awareness of the pandemic was gaining steam. Things did level off in April with supply improving and prices for a dozen leveling off at around $1.50. Still, many outlets around the country are limiting purchases at two cartons per customer as the pandemic continues. 

So what to do when eggs might not be available for your next baking effort? Why turn to Syfo of course! According to this article on Fox News, Rebekah Strand, development chef for Conagra Brands, says sparkling water or seltzer is the perfect egg substitute for baking ingredients. 

“I use ¼ cup per egg,” says Strand. She noted that both seltzer and flavored sparkling water would work, although the latter may affect the final flavor.
